Kagianas

Kagianas (also known as "strapatsada") is a traditional Greek dish made from scrambled eggs with tomatoes, and often served with bread or as a light meal. Here's a simple recipe:

Ingredients

  • 4 large eggs
  • 3 ripe tomatoes (grated or finely chopped)
  • 2 tbsp olive oil
  • 50g feta cheese (optional, crumbled)
  • Salt and pepper (to taste)
  • 1/4 tsp dried oregano (optional)
  • 1 garlic clove (minced, optional)
  • Fresh parsley or basil for garnish (optional)

Instructions

  1. Prepare the Tomatoes
    • Grate the tomatoes or finely chop them. If using canned tomatoes, you can use 1 cup of crushed tomatoes.
  2. Cook the Tomatoes
    • In a medium pan, heat olive oil over medium heat.
    • Add the garlic (if using) and sauté for a minute until fragrant.
    • Add the tomatoes and cook them down for about 8-10 minutes until they reduce and thicken slightly. Add salt, pepper, and oregano to taste.
  3. Scramble the eggs
    • In a bowl, lightly beat the eggs with a pinch of salt and pepper.
    • Once the tomatoes are ready, pour the beaten eggs over them.
    • Stir continuously to scramble the eggs with the tomatoes until the eggs are cooked to your desired texture (about 3-5 minutes).
  4. Add the Feta
    • If using, crumble the feta cheese into the mixture and stir until it slightly melts.
  5. Serve
    • Garnish with parsley or basil, if desired. Serve warm with crusty bread on the side.
