Dakos Salad

Dakos is a traditional Cretan salad known for its simplicity and robust flavors.

Ingredients

  • 2-3 dried barley rusks (or you can use toasted bread if rusks are unavailable)
  • 2 ripe tomatoes, chopped
  • 1/2 cup crumbled feta cheese or sour mizithra cheese
  • 1/4 cup black or Kalamata olives, pitted
  • 2-3 tablespoons extra virgin olive oil
  • Dried oregano
  • Salt and pepper to taste

Instructions

  1. Prepare the Rusks: Lightly moisten the barley rusks with a little water, then let them sit for a few minutes until they soften slightly. If using toasted bread, skip this step.
  2. Assemble the Salad:Place the moistened rusks on a serving plate. Top with chopped tomatoes, crumbled cheese, and olives.
  3. Season: Drizzle with olive oil. Sprinkle with  dried oregano, salt, and pepper.
  4. Serve: Allow the salad to sit for a few minutes to let the flavors meld and for the rusks to absorb some of the tomato and olive oil.

Dakos is a hearty, flavorful salad often enjoyed as an appetizer or light meal, particularly in the warm months.
