Kagianas
Kagianas (also known as "strapatsada") is a traditional Greek dish made from scrambled eggs with tomatoes, and often served with bread or as a light meal. Here's a simple recipe:
Ingredients
- 4 large eggs
- 3 ripe tomatoes (grated or finely chopped)
- 2 tbsp olive oil
- 50g feta cheese (optional, crumbled)
- Salt and pepper (to taste)
- 1/4 tsp dried oregano (optional)
- 1 garlic clove (minced, optional)
- Fresh parsley or basil for garnish (optional)
Instructions
- Prepare the Tomatoes
- Grate the tomatoes or finely chop them. If using canned tomatoes, you can use 1 cup of crushed tomatoes.
- Cook the Tomatoes
- In a medium pan, heat olive oil over medium heat.
- Add the garlic (if using) and sauté for a minute until fragrant.
- Add the tomatoes and cook them down for about 8-10 minutes until they reduce and thicken slightly. Add salt, pepper, and oregano to taste.
- Scramble the eggs
- In a bowl, lightly beat the eggs with a pinch of salt and pepper.
- Once the tomatoes are ready, pour the beaten eggs over them.
- Stir continuously to scramble the eggs with the tomatoes until the eggs are cooked to your desired texture (about 3-5 minutes).
- Add the Feta
- If using, crumble the feta cheese into the mixture and stir until it slightly melts.
- Serve
- Garnish with parsley or basil, if desired. Serve warm with crusty bread on the side.
